- WELCOME to CUPCAKE DELIGHTS by Eileen!!!! For while I had this idea... the idea of starting my own cupcake business. This way, while having a job I would truely enjoy, I still had time to go full time to college and still managed to spend time with family and friends. A few months ago I shared my thoughts and ideas with my boyfriend. When he heard what I had in mind, he told me it would be a hit! Sure enough with the help of my wonderful boyfriend we came up with a home made receipy that soon became popular among our family members and friends. After baking many yummy cupcakes and spreading the word of my new creations.. Cupcake Delights by Eileen was on its way to serving the Miami area.
